Studies on scraped surface heat exchanger for making ghee
The work was aimed to investigate heat transfer to ghee in a small 0.12 meles diameter scraped surfaced heat exctianger of 0.70 m length. A large increase in film heat transfer co-efficient resulted in from the scrapping action of the value of h to be higher with increasing speed of the scraper. The flow rate of the product in the range it was varied in this study was found to have no influence on the h value. On the basis of study suggestions were offered for the development of equipment to make ghee with economy in energy. As a part of fature scope of work it is suggested to conduct studies to determine optimum values of film heat transfer co-efficient and residence time that make the product to have to the lowest moisture content removal of moisture from ghee under multistage evaporation for economy and further heating of the product for flavour development
